Shianna Smart, the co-owner of Trails End Buffalo Stix in Gull Lake, Saskatchewan, initially doubted the legitimacy of an email from NASA but was thrilled to learn that Canadian astronaut Joshua Kutryk had chosen their bison jerky for the upcoming NASA-SpaceX mission to the International Space Station. This selection process involving Canadian options like the bison jerky underwent scrutiny by both the CSA and NASA before getting the green light for space travel.
Having previously seen their jerky in orbit with astronaut Chris Hadfield in 2013, Smart expressed her excitement at the unexpected opportunity for her brand to reach space once again. She hopes that the exposure of their jerky in space will highlight its suitability not just for astronauts but also as a convenient snack for everyday use, such as kids’ lunches, sports activities, or while traveling.
Natalie Hirsch from the Canadian Space Agency explained that while NASA supplies a majority of the food for astronauts, they can personalize the rest, with the CSA offering Canadian options. Specific requirements for space-bound food include an 18-month shelf life, space-compatible packaging, and a non-crumbly nature. Local support plays a vital role in the success of small businesses like Trails End Buffalo Stix, as emphasized by Nolan Langer from the Saskatchewan Food Industry Development Centre in Saskatoon, where the jerky has been produced for nearly two decades.
Apart from the bison jerky, Canadian space-bound products include maple syrup from Ontario and Quebec and salmon from the west coast. This opportunity not only showcases Canadian products beyond our atmosphere but also underscores the importance of local support for small businesses to thrive.
