“Traybake Showdown: Rick Stein vs. Mary Berry”

When it comes to deciding on dinner options, the task can often be daunting, especially with many so-called “quick and easy” recipes requiring a long list of ingredients and multiple steps. This is why I gravitate towards traybakes or one-pot meals when exploring new recipes online.

Traybakes offer a convenient solution for family meals, with chicken and vegetables cooked together on a single large tray in the oven.

Among the various chicken traybake recipes I’ve tried, two have particularly impressed me. These recipes, although quite similar, come from renowned chefs Rick Stein and Mary Berry.

I’ve recently tested Rick Stein’s chicken, lemon, and garlic traybake along with Mary Berry’s Mediterranean all-in-one chicken. Of the two, one has become a regular in my monthly cooking routine.

Mary Berry’s Mediterranean all-in-one chicken recipe is a simple yet flavorful dish that combines juicy chicken with colorful vegetables, all seasoned and cooked to perfection.

While the recipe suggests one chicken thigh and drumstick per serving, adjustments can be made for smaller portions. In my preparation, I omitted green olives and extended the roasting time after adding courgettes.

Although the traybake turned out delicious, I would consider using regular lemons instead of preserved lemons in future attempts for a more preferable taste.

Rick Stein’s chicken traybake recipe focuses on chicken thighs laid on a bed of fennel, courgette slices, and baby potatoes. Similar to Mary Berry’s version, lemons are a key ingredient, but Rick utilizes fresh lemons for enhanced flavor.

With a step involving pan-searing the chicken before baking, Rick’s recipe results in crispy skin and tender meat, elevating the dish’s overall taste experience.

Despite requiring slightly more preparation than Mary Berry’s recipe, Rick Stein’s chicken traybake delivers a significantly superior flavor profile. Its simplicity and cost-effectiveness make it a preferred choice over the more expensive alternative.
